ASIAN PEANUT CHICKEN SALAD

How to Make:

The ingredients that you can use to prepare this salad are peanut butter, soy sauce, sesame oil, rice vinegar,cliantro, honey, sugar, water and a pinch of salt. You can easily find these ingredients in the grocery stores.
This peanut dressing is a mixture of sweet, salty, tangy and nutty. The peanuts and veggies  gives a nice crunch while the mandarin oranges produce the subtle sweetness and it rounds up the dish so perfectly.
To get protein from the salad you can use chicken.

Asian Peanut Chicken Salad

Ingredients:







  • oz shredded cabbage
  • 1/2 cups shredded carrots
  • 1 cup shelled edamame
  • 1/2 cups canned mandarin oranges drained
  • 1 cup honey roasted cashews
  • 1 cup rotisserie chicken or more

Peanut Dressing:

  • 1/2 cup peanut butter (which is salt and sugar-free)
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 2 tablespoons sesame oil
  • 2 tablespoons sugar
  • 2 tablespoons cilantro packed
  • 1 tablespoon soy sauce
  • 2 tablespoons water adjust accordingly
  • pinch of salt adjust accordingly


Instructions:

  1. Firstly in a blender or food processor, combine all the ingredients under Peanut Dressing then add more water if necessary to achieve desired consistency. 
  2. Set aside, in a large bowl, combine shredded cabbage, shredded carrots, shelled edamame (microwave for 13-203 seconds if it is frozen), mandarin oranges, honey roasted cashews, and rotisserie chicken.
  3. I will highly recommend to serve with dressing on the side. 
  4. lastly add dressing when ready to eat! Now serve and enjoy the salad!!!
