ZUCCHINI NOODLES WITH MARINARA SAUCE AND PEPPERONI


The Zucchini Noodles with Marinara Sauce and Pepperoni is a completely low carb/keto meal. You’ll just feel great about it when you will be eating. This is so delish, savoury and juicy! I can guarantee that you’ll want to put this dinner recipe into your weekly rotation. This quick low heat crab dish is so easier because only a handful of ingredients and everything cooks in just one pan and so easy to clean-up. This healthy low carb meal that cooks within 10 -12 minutes only!!!


Ingredients:

  • 1 tablespoon of butter
  • 4 spiralized zucchini package
  • 1 or 1/2 cup Marinara sauce with no sugar added or you can use your favourite pasta sauce.
  • 2 cups pepperoni slices.
  • Few fresh cracked pepper
  • Crushed red chilli pepper flakes (optional)
  •  For garnish, grated parmesan and fresh chopped parsley

Directions:

1. Firstly in a large skillet over medium-high heat, melt one tablespoon butter, then add the zucchini noodles and toss for 2-3 minutes to cook it up. You can allow the cooking juices to reduce for one minute if the zucchini noodles render too much water.
2. After that, stir in the Marinara sauce and add the pepperoni slices. Continue cooking until the sauce has thickened and sticks to the zucchini.
3. You have to season with pepper and a pinch of crushed chilli pepper flakes if you want a kick of spice! Lastly, garnish the Pizza Zucchini Noodles with fresh chopped parsley, and serve immediately with grated parmesan, if you like that.  Now it is ready to enjoy!



 Notes: Zucchini always tends to render a lot of water while cooking, so you can sprinkle with salt after spiralizing, then to take off excess water allow to sit for a couple of minutes. After that rinse well to get rid of salt.  Drain thoroughly in a colander and pat dry in a kitchen towel before cooking. This will not let the noodles to attached each other.
