Ingredients:
1. 1 cup whole milk
2. ¼ cup heavy cream
3. 2 tablespoons granulated sugar
4. 4 eggs
5. 2 tablespoon vanilla extract
6. ¾ tablespoon ground cinnamon
7. ¼ tablespoon kosher sea salt
8. 6 cups dried cubed bread (white, challah, brioche, cinnamon raisin or croissants)
For The Topping:
1. ⅓ cup all-purpose flour
2. ¼ cup brown sugar
3. ½tablespoon ground cinnamon
4. ¼ cup unsalted butter
Directions:
1. Firstly pre-heat your oven to 350 degrees. Spray a 12 cup muffin pan with cooking spray and set aside
2. After that in a large bowl, whisk together sugar, cream, eggs, vanilla, milk cinnamon and salt.
3. Then add the cubed bread into the mixture, toss them gently to combine and scoop a 1/3 cup of mixture into each well.
4. Meanwhile, in a medium bowl, to make the topping. Whisk together the flour, cinnamon and brown sugar. By using a pastry blender or your fingers, break the butter into small pea-size clumps. Sprinkle the streusel mixture over the tops of the muffins.
5. Place in the oven and bake about 28-30 minutes, until turns into golden brown on the top. Remove from the oven and allow to cool for 5-6 minutes before removing and serving.
Tips:
If you want you can add fresh or frozen berries to these too!
